- 30 ml fresh lime juice
- 20 ml syrup
- 1 egg white
- Ice cubes
- A piece of angostura bitters for garnish (optional)
Instructions for use
- Fill a shaker with ice cubes.
- Add the pisco, lime juice, syrup and egg white.
- Shake vigorously without ice to emulsify the egg white, for about 10 seconds.
- Add ice and shake again for about 15 seconds.
- Strain the drink into a chilled cocktail glass.
- Garnish with a few drops of angostura bitters if desired.

- For best results, use a quality pisco.
- If you want a milder acidity, adjust the amount of lime juice to taste.
